Grade A Very Dark Color, Strong Taste Maple Syrup is the last of the maple syrup grades comes at the end of the sugaring season, as the sap starts to slow and boiling simmers down. Very Dark (Strong) syrup has the most intense maple flavor developed over many weeks.  In recent years, the Very Dark and Dark have become preferred grades due to their stronger maple flavor.  Very Dark syrup holds up well in cooking and barbecuing, as the maple flavor transfers to the final product.    The robust, intense maple flavor of Very Dark syrup can stand up to the heat from the oven or fire pit without fading.
